Not doing a double header with 2 steam engines present would be like going to Scranton and not visiting Steamtown. I am sure it will be done. Though not what the original railway did. The trains were usually small enough for one engine to manage. I'm not saying they never did it, just that it was not common practice on a two footer, accept for the plow trains of the SR&RL.
