Is there a list somewhere of how many pieces of rolling stock were brought to Edaville?

For what it's worth, Linwood Moody's 1947 booklet titled "Edaville Railroad" (self-published by Ellis Atwood) gives the Edaville roster at that time as including:

Monson engines 3 and 4;

B&SR engines 7 and 8;

B&SR coaches 15, 17, and 18;

W&Q/WW&F coach 3;

B&SR baggage car 31;

SR&RL parlor car 'Rangeley';

15 boxcars from the B&SR;

14 flatcars from the B&SR;

2 tank cars from the B&SR;

4 excursion cars (presumably converted from B&SR boxes and/or flats?);

B&SR caboose 101;

SR&RL caboose 557;

B&SR snowplow;

B&SR flanger;

2 SR&RL Model T railcars;

SR&RL Reo railbus;

plus 2 Model T "bog engines", a 5-ton Pymouth gas-mechanical engine, and 32 4-wheel dump cars already on the property.

(The other SR&RL passenger cars and cabooses appear to have arrived separately sometime after 1947.)
